Picnic Recipe: Berry Berry Salad With Raspberry Vinaigrette Berry Berry Salad With Raspberry Vinaigrette

Serves 6
Prep time: 10 minutes
4 cups mixed greens
1 cup blueberries
1 cup sliced strawberries
½ cup raspberries
¾ cup crumbled feta cheese
½ cup walnut halves or pieces
Raspberry Vinaigrette to taste (recipe follows)
1. Combine ingredients for dressing and set aside or refrigerate overnight.
2. Before serving, combine mixed greens and walnuts and toss with vinaigrette to taste. Top with remaining ingredients and serve.
Raspberry Vinaigrette
Makes ¾ cup (12-16 servings)
Prep time: 5 minutes
1⁄3 cup olive oil
¼ cup red wine or white vinegar
2 Tablespoons orange juice
2 Tablespoons seedless raspberry jam
Dash salt
Freshly ground pepper to taste
1.  In a blender, combine the oil, vinegar, orange juice and raspberry jam.
2. Add salt and pepper to taste. Cover and refrigerate any unused portion.
